RESEARCH ON A BIOACTIVE SUBSTANCE MONACOLIN K PRODUCED BY MONASCUS SOLID-STATE FERMENTATION

Abstract: Monacolin K, a bioactive substance produced by Monascus , is one of the focuses on Monascus research, and which is expanding to industrialization. Monascus growth in solid-state fermentation was studied by determining glucosamine in media and dry mass weight loss. Second rapid growth period was detected in decreasing temperature cultivation. Optimum technology was drawn by single faction and Box-behnken experiment design using SAS software. That was rice medium, initial moisture content 50% and kept scope of 46%52%, initial pH6.0, medium thick 3 –4cm, 30 cultivated for 9 days and decreased to 25 0C up to 13 days, the highest Monacolin K yield was 5.34 mg/g dry mass. Contamination existed in the course of Monascus solid-state fermentation. Main contamination and the source of contamination were analyzed. Dealing with rice medium rightly and controlled media moisture content could reduce contamination. The commercial explore on the research was discussed through analyzing the produce, marketing strategies, management and financial analysis of a mode Monacolin k product.
